Wishful Wednesday

After an unsatisfying meal from the school dining hall (aka grill), I am craving sweets. 



Side note:  My friend Laura Merrill, the ghi, is doing a 30 Days of Gratitude blog challenge.  She inspires me so.  Yesterday she reminded me that we can sometimes be ungrateful witches, so while today I am being selfish in all of my desires, I am also going to share a few things I'm thankful for.  

1.  I am grateful for date night with Juddy tonight!
2.  I am grateful for my boss and good friend, Tina Tina, putting up with my constantly interrupting her studying to chat.
3.  I am grateful for beautiful weather.
4.  I am grateful for Brad Paisley tickets!!!!
5.  I am grateful for having only 6 kids at nap time and gchat.

Spooky, Scary

Happy (almost) Halloween!!  Call me a party pooper, but I'm not the biggest fan of this wicked holiday.  I am, however, becoming a fan of the color combo orange black.  What do you think about Halloween decor all year long???

Oh What A Night

I'm just starting to feel normal.  We had a blast seeing Carrie Underwood and I think I had even more fun dancing on Beale into the early morning hours.  (It was only around 1 am, but that is waaayyy past my bedtime).  Here is our group before heading into the Forum.  
Note: I wore neither country nor rock.  Just some jeggings and a top.  Simply me.  

Here are a couple of shots of Carrie from the nosebleed section.  

After recovering, Judson and I whipped up a simple Sunday dinner of pot roast.  I love a good crock pot meal.  Judd seared the roast while chopped up the veggies...
7hours later...
Mmmm mmm good!  

Perfect Pot Roast
1 pkg dry onion soup mix
1 can cream of mushroom soup
1 cup water 

2-3 pound pork roast
Carrots
New Potatoes
Button Mushrooms
Onions

Turn crock pot on low setting and add first 3 ingredients.  Stir until mixed well.
Season the roast. (We used salt, pepper, orgeano, garlic powder, and onion powder).  Sear in skillet for around 3 minutes per side.  
Add roast and veggies to crock pot.  Cook on low for 6-8 hours.  
Muy delicioso!!

Gettin Carried Away

Tomorrow night I'm hitting the town with a some gal pals to see Carrie Underwood.  And I'm not gonna lie...I'm totally pumped!!  WHOOP WHOOP!!  But what to wear??  She's a little bit country, a little bit rock and roll.  Which way to go...
(Martha, if you're reading this I really wish you would rock big Texas hair).

Oh. My. Awesomeness.

Sometimes I'm just in the mood for a big ol' piece of red meat.  Anybody with me on this??  Well, last night  Judson and I treated ourselves to a strip and a ribeye.  I added a little pizzaz to mine with an Onion-Blue Cheese Sauce that I found from the Pioneer Woman.  (I borrowed this picture from her too.  A food photographer, I am not.)

Let me point out that any good piece of meat doesn't need this extra goodness.  But it is sooooo delish!  I only did 1/4 of the sauce recipe because it's a little on the rich side and I didn't want to kill the already flavorful steak.  Have I mentioned that Judd is my grill master?  He marinated the steak in Doe's steak seasoning and added a little salt and pepper.  Thanks Juddy!  For our side we had roasted fingerling potatoes.  Nothing special, just potatoes tossed with rosemary, thyme, olive oil, salt & pepper.  Superb steak night!!
